Lord of the Wings
12 large boneless skinless chicken thighs
1/3 cup of your favourite bbq sauce
2 tbsp reduced sodium soy sauce
2 tbsp dijon mustard
2 tbsp liquid honey
2 tbsp freshly squeezed lemon or lime juice
2 tsp minced garlic
1 tsp chili powder
4-5 dashes of hot sauce
1 tsp cornstarch
Preheat oven to 400 degrees F. Spray a 9X13 pan with cooking spray and set aside.
Trim any visible fat from the chicken thighs. Cut each tigh in half and place cut pieces in a single layer in the prepared pan. Fold or roll them up a bit so they resemble wings. They should just fit in the pan. (3 rows of 8 "wings")
Whisk together bbq sauce, soy sauce, mustard, lemon juice, garlic, chili powder and hot sauce in a small bowl. Spoon sauce evenly over chicken.
Bake, uncovered 35 – 40 minutes until chicken is cooked through and sauce is bubbly. Arrange chicken on platter and keep warm. Pour sauce into a small pot. Mix cornstarch with 2 tsp of water, stir into sauce. Bring to a boil and whisk until thick. Serve with "wings".
Recipe Notes: Well we all loved this dish. Well except Maya, but all she really eats is peanut butter sandwiches. This was quick and easy to put together and they actually did look a little like wings on your plate. I will definitely be making this again.
