>> Chicken Enchiladas
1 c chopped onion or onion salt
1 t ground cumin
1/2 t garlic powder
10 oz can cream of chicken soup
12 corn tortillas
16 oz can tomatoes, chopped
2 c shredded cheddar cheese
3 chicken breast halves
4 oz can chopped green chilies
Cover chicken with water and simmer for 30 minutes. Cool, bone, and cut into strips, set aside. Mix tomatoes, soup, chilies, cumin, and garlic powder. Dip tortillas into broth left from boiling chicken, place one on a plate, add 2 tb. Of mixture and 1 tb. Of cheese. Roll up and place seam side down in baking pan.
After all are filled and rolled, pour remaining sauce evenly over enchiladas and sprinkle with remaining cheese. Bake at 350 until cheese is melted (about 20 minutes).
>> Baked chicken enchiladas
1 c chicken stock
1 pt whipping cream or half & half
1 pt sour cream
1 tb flour
1 ts salt freshly ground black pepper
12 corn tortillas
2 green onions & tops, chopped
2 pimentos, cut in strips 1/2 lb cheddar cheese, grated green chilly sauce, or salsa lettuce, coarsely chopped
3 c cooked chicken breast
Preheat oven to 350 f. Mix flour with stock and heat until slightly thickened. Add the whipping cream (or half & half), green onion, salt and pepper. Bring to boil. Stir in sour cream until well mixed. Dip each tortilla in cream sauce, then arrange chicken and strip of pimento down center of each tortilla. Roll and place in greased baking dish (or spray with food release) seam side down. Pour remaining cream sauce over all and bake for 30 min.
Remove from oven and sprinkle grated cheese over all and return to oven until cheese is melted. Arrange coarsely chopped lettuce around edges of dish. Serve with green chili sauce, or salsa crude, or pico de gallo.
